Ciambelline al vino (wine doughnuts) are dry cookies from the rural tradition of Lazio, simple and genuine, perfect to enjoy with a glass of wine or a cup of tea. Made with flour, sugar, extra virgin olive oil and red or white wine, these doughnuts are distinguished by their rustic taste, crisp surface and intense aroma.

Dusted with sugar before baking, they are ideal for dipping or serving at the end of a meal. Easy to prepare and without eggs or butter, wine donuts are a sweet treat that smells of tradition and simplicity.

  • 350gr 00 flour
  • 100gr Sugar
  • 100ml red or white wine
  • ½ sachet Baking powder
  • 100ml extra virgin olive oil

Instructions

1. Mix the wine, sugar, and oil in a bowl. Add the sifted flour and baking powder.

2. When the dough begins to take on some consistency, move it to a pastry board and knead it with your hands.

3. Peel off pieces of dough and form small strands, then join the ends together to form doughnuts.

4. Dip the doughnuts in granulated sugar (one side only). Place them on a baking sheet covered with baking paper, sugar-side up.

5. Bake at 170 °C and bake for about 15 minutes.

6. Take the doughnuts out of the oven, let them cool, and serve.


Wine donuts: a few simple ingredients

Few ingredients are needed to make wine doughnuts: they contain no butter or eggs, but only flour, wine, sugar and extra virgin olive oil, the star of our recipe, as:

  • It makes our doughnuts fragrant, light and digestible.
  • It allows the dough to be softer than that made with butter (being liquid, it allows it to incorporate more air during processing).

Preparation tips for doughnuts 

Doughnuts can be made with either white or red wine, depending on your taste and the effect you want to achieve:

  • With white wine they will have a slightly milder taste.
  • With red wine, the taste will be slightly more intense.
  • Since it is a dessert, we recommend that you make the doughnuts with a sweet wine, but whatever you have on hand will do just fine.

Once ready, you can store the doughnuts in a tin or other food container for at least 1 week to 10 days (if you manage not to eat them all first).
