Special wheat flour for pizza

Consistency

Type 0 pizza flour has a fine, but slightly more rustic texture. It is designed to absorb a greater amount of water, making it particularly suitable for very hydrated doughs, which are the basis of traditional pizza.

Tips In The Kitchen

Its elasticity and ability to develop a good gluten mesh make it perfect for pizza dough, which should be soft but with a well-crisped crust. Although specific for pizza, this flour can also be used for similar preparations, such as flatbreads and breads.

This type of flour is designed to absorb more water than other type 0 flours, allowing for a more hydrated, elastic and easily workable dough.
