Chicken breast is a great classic that everyone eats or prepares at least once a week: light, versatile, quick, it can solve a meal in minutes.
So today let's prepare together a recipe with a fresh and citrus flavor: lemon chicken breast, a light and tasty second course, ideal for any occasion.
Ingredients
- 600 g chicken breast
- 100 g of lemon juice
- 1 lemon (zest)
- q.b. of Extra Virgin Olive Oil
- q.b. flour
- q.b. salt and pepper

Instructions
1. Mix lemon juice, grated zest, extra virgin olive oil, salt and pepper in a bowl.
2. Place the chopped chicken breast in the same bowl and let it marinate in the refrigerator for 30 minutes, making sure it is totally covered.
3. Drain the chicken breast from its marinade and dredge it in flour.
4. Brown it for a few minutes in a frying pan with a drizzle of evo oil.
5. Add the marinating liquid and cook for about 15 minutes on low heat.
6. Plate by garnishing with grated lemon peel.
Lemon chicken: some preparation tips
Below are some small tips to avoid making mistakes:
- Be careful to choose a fresh chicken breast: its color should be pinkish, without spots or darker areas, its odor neutral or slightly sweet, and its texture firm and supple.
- Marinating the chicken is important: don't rush it, and make sure this is well absorbed by the meat, otherwise the recipe won't have that distinctive citrus flavor.
- Cook the chicken over medium heat-this will ensure the meat remains tender without drying out too much.
- You can customize your lemon chicken with your favorite spices; we suggest fresh herbs such as rosemary, parsley or thyme.
- For our dish we used chicken breast, but you can safely use whatever parts you prefer!
