  • 300gr cake flour
  • 150gr Sugar
  • 100ml extra virgin olive oil 
  • 50ml Milk
  • 3 Eggs
  • 1 Lemon
  • 1 sachet of baking powder
  • q.b. Icing sugar

Instructions

1. Beat the eggs with an electric whisk together with the sugar until frothy and lighter.

2. Combine the milk and extra virgin olive oil in a trickle, continuing to whisk. Add the juice and zest of the lemon.

3. Mix the baking powder together with the flour. Sift it all together and add to the dough with the eggs.

4. Once a smooth mixture is obtained, pour it into a greased and floured baking pan.

5. Place in preheated oven at 180 °C for about 40 minutes.

6. Once cooked, let cool and dust with powdered sugar.
