Orange salad is a typical traditional Sicilian recipe, a winter variation to the classic summer salads. This dish can be proposed either as a tasty and colorful appetizer or as a side dish, a little different from the usual ones.
This recipe combines the sweetness of oranges with the crunchiness of fennel and the strong flavor of black olives, all enhanced by the aroma of extra virgin olive oil.

  • 4 oranges
  • 2 fennels (optional)
  • 100gr baked black olives (optional)
  • 100gr arugula (optional)
  • 1 red onion from Tropea
  • 1/2 lemon in juice
  • 5 tablespoons of EVO oil
  • q.b. salt
  • pepper to taste

Instructions

1. Peel the oranges, removing the white part, and cut them into thin slices.

2. Cut the onions into julienne strips and let them soak for about 10 minutes. If desired, you can add fennel, baked black olives or arugula, previously washed and chopped.

3. Assemble all previously cut ingredients in a bowl.

4. In a small bowl, emulsify the orange juice with extra virgin olive oil, salt, and pepper.

5. Pour the emulsion over the salad and toss gently to blend the flavors.

6. Let the salad rest for 10 minutes at room temperature before serving.
