Beef carpaccio with winter melon is a dish that needs no cooking-a tasty and easy-to-make main course suitable for any occasion. You can prepare it for an appetizer, a buffet, or as a light main course.
Prepared with very thin slices of high quality raw beef, it is usually served with a drizzle of extra virgin olive oil, grana shavings, fresh arugula, and sometimes a touch of lemon or mild sauces. Today we prepare it in a more wintry version, pairing it with white melon.

Instructions
1. Cut the melon in half and remove the seeds. With a digger, make melon balls.
2. Cut the meat with the help of a meat slicer.
3. Lay the sliced meat on a serving plate.
4. Arrange the melon balls, previously prepared, on the carpaccio slices.
5. Season with extra virgin olive oil, salt and pepper.
6. Garnish as desired with salad leaves, arugula or valerian.
Beef carpaccio: tips and preparation
When making beef carpaccio, it is essential to use top-quality ingredients. Here are some tips:
- Beef carpaccio is raw, and the choice of meat, which must be very fresh, is crucial. Pay attention to color and smell: fresh meat has a bright red color, without spots and darker areas, it has almost no odor, and the fat is a snow-white color.
- We chose to use melon to give freshness to the dish, without sacrificing seasonality; if you prefer, you can choose other products that go very well with beef, such as mushrooms.
- You can enjoy the carpaccio by accompanying it with bread, focaccia or crackers, and give it an extra touch of flavor by adding, if you like, some balsamic vinegar, remembering not to overdo it, however, because of its rather intense taste.
Extra virgin olive oil: the star of the recipe!
What we are going to prepare is a cold dish, which should be seasoned raw; what is the ultimate raw seasoning? Extra virgin olive oil, of course!
Why choose to season with oil and not with a sauce? Because EVO oil:
