Instructions

1. Beat eggs with sugar in a bowl. Add the flour sifted with the baking powder and milk. Stir and place the batter for about ½ hour in the refrigerator.

2. Core the apples, peel them and cut them into rounds about ½ cm thick.

3. Sprinkle the apple slices with lemon juice to prevent them from blackening.

4. Heat the oil in a large frying pan and dip the apples into the batter.

5. Fry each one for a maximum of 2-3 minutes. Remove them from the oil and lay them on a sheet of paper towels.

6. Sprinkle the pancakes with sugar and serve hot.


Apple fritters: why fry them in olive oil?

Many people think that the most suitable oil for frying is seed oil, but ideal for the purpose is olive oil because its high smoke point makes it perfect for holding up to high temperatures. Not only that, frying with olive oil is also lighter and helps make apple fritters more digestible. We used Farchioni Olive Oil, which is characterized by a subtle fragrance and a light fruit flavor that lends itself well to frying our apples.

In order for the pancakes to be crisp and dry, they must be dipped in hot oil, so that the crust forms on their surface that is not only very good, but essential to ensure that they do not soak in oil. The ideal temperature for the oil is 150°-160°C; if you do not own a suitable thermometer, do it this way:

  • Drop a drop of batter into the oil: if it starts sizzling and comes back to the surface, it means the oil is at the right temperature.
  • Dip a wooden toothpick into the pan: if bubbles form on its surface, it means it is hot enough.

Preparation tips for apple pancakes

Making apple fritters is not difficult, but as always it is important to follow a few small steps:

  • For the recipe we recommend that you use green apples, such as Granny Smiths, which are fresh, juicy, slightly tart, and have fairly firm flesh.
  • For cutting, only one piece of advice: slices thin enough so they can cook.
  • Once cut, remember that apples exposed to air will oxidize and blacken: to prevent this, spray them with lemon juice.
  • Place the batter in the refrigerator before using it, so that the temperature difference with the boiling oil will create the "heat shock" that will make your apple fritters extra crispy.
  • If you want an even fancier recipe, add lemon zest to the batter.
