1. Clean the anchovies thoroughly, removing the heads and entrails, then rinse them under running water.
2. In a saucepan, bring the white wine vinegar to a boil. Add the cleaned anchovies and cook them for about 2 minutes. When cooked, drain the anchovies and allow them to cool completely.
3. Meanwhile, prepare the sterilized glass jar: wash it well and heat it in the oven at 100°C for a few minutes.
4. Arrange the anchovies in the sterilized jar and-if desired-alternate with the garlic cloves and black peppercorns.
5. Cover the anchovies completely with extra virgin olive oil, taking care to remove any air bubbles.
6. Seal the jar tightly and store in a cool, dark place for at least one week. After the storage period, the anchovies will be ready for consumption. Store in the refrigerator once the jar has been opened.
