Instructions
1. If using fresh chestnuts, cut the skin off and boil them in boiling water for about 20-30 minutes. Once boiled, drain and peel them. If already cooked chestnuts are used, skip this step.
2. Place the sliced onion, celery and carrot in a pot, add the extra virgin olive oil, pepper and salt and sauté for 2 minutes.
3. Add the chopped potatoes and previously boiled chestnuts and cook over medium heat for about 20 minutes or until the potatoes are tender. Keep five or six chestnuts aside for the final decoration.
4. Add the vegetable broth to the pot and bring to a boil.
5. Use an immersion blender to blend the soup until smooth and creamy.
